‘Heart Smoke’ is the translation of Corazon Fum from the Catalan. We cut up 150# of apples and put them in 2 fresh Domain Drouhin barrels aptly named Cheech & Chong. We filled the barrels with applewood smoke and allowed to sit overnight to let the tannins in the apples break down and for the smoke to penetrate. After aging our Sahalie in these barrels with the apples for 15 months, we bottle-conditioned with apple juice saved from the original harvest.
